MICHELIN Guide Recognizes 15 New Colorado Restaurants

DENVER – Today, Governor Polis and the Colorado Tourism Office (CTO), a division of the Colorado Office of Economic Development and International Trade (OEDIT), announced that the MICHELIN Guide unveiled its fourth annual selection for Colorado, revealing the state's one new One-Star restaurants, along with new Bib Gourmand and Recommended Restaurants. Recognized restaurants span the state, with selections in Aspen, Aurora, Avon, Beaver Creek, Boulder, Breckenridge, Colorado Springs, Denver, Telluride and Vail.

The 2026 selection includes 63 restaurants spanning 22 cuisine types.

Milpero (Denver) received one MICHELIN Star, joining Colorado's growing list of MICHELIN-Starred restaurants.

"Congratulations to this year's amazing restaurants honored by the MICHELIN Guide. Colorado's incredible restaurants are the heart of our communities, making delicious food and strengthening our local economies. I am excited to celebrate our talented professionals and the role local restaurants play in keeping Colorado creative and the best place to live, work, play and eat!" said Governor Jared Polis.

In 2026, the MICHELIN Guide expanded its coverage to the entire state of Colorado with MICHELIN Guide Inspectors assessing and selecting restaurants across Colorado, evaluating a wide range of dining experiences that showcase the state's unique ingredients, cultural influences, and culinary innovation.

"We are delighted to see the MICHELIN Guide continue to celebrate Colorado's culinary excellence and skill. This prestigious recognition lifts up our restaurant industry, drives tourism, and supports our small businesses across the state. Congratulations to this year's honorees," said OEDIT Executive Director Eve Lieberman.

MICHELIN also recognized three new Bib Gourmand restaurants, 11 new Recommended Restaurants and four special awards.

"We are proud to see Colorado's culinary scene continue to gain prestigious recognition through the MICHELIN Guide," said Timothy Wolfe, Colorado Tourism Office Director. "This year's statewide expansion of the Guide provides an opportunity to showcase the exceptional talent of restaurateurs across Colorado, strengthening culinary tourism and giving travelers more reasons to explore communities across the state and experience the flavors that make Colorado unique."

The CTO extends its sincere congratulations to all the culinary professionals and establishments honored in the 2026 MICHELIN Guide. These recognitions underscore the passion, creativity and hard work of Colorado's vibrant culinary community.

Thanks to the rigorous MICHELIN Guide selection process that is applied independently and consistently in more than 60 destinations, the MICHELIN Guide has become an international benchmark in fine dining.

All restaurants in the Guide are recommended by Michelin's anonymous inspectors, who are trained to apply the same time-tested methods used by Michelin inspectors for many decades throughout the world. This ensures a uniform, international standard of excellence. As a further guarantee of complete objectivity, Michelin inspectors pay all their bills in full, and only the quality of the cuisine is evaluated.

To fully assess the quality of a restaurant, the inspectors apply five criteria defined by Michelin: product quality; mastery of cooking techniques; harmony of flavors; the personality of the chef as reflected in the cuisine; and consistency over time and across the entire menu. These criteria guarantee a consistent and fair selection so a Starred restaurant has the same value regardless of whether it is in Paris, New York or anywhere else in the world.
