A Fresh Coat of Joy: Sable Shortbread Bakery Begins a Bright New Chapter in Downtown Windsor

WINDSOR, Nova Scotia - Rezul -- This fall, Sable Shortbread Bakery has added a fresh pop of colour to Downtown Windsor — transforming its storefront at 138 Gerrish Street with a vibrant new coat of its signature pink pantone coupled with crisp white trim.

The update marks the next phase of the bakery's ongoing transformation — a renewal that celebrates resilience, community, and the enduring joy that has defined Sable Shortbread for over a decade. The family-run business relocated to Windsor last year after five successful years in Kentville, and the newly painted exterior symbolizes both a fresh start and the creative energy driving what comes next.

Adding to the sense of community pride, the work was completed by a local painter who grew up in Windsor and was delighted to help brighten up the town's main street.  "Our colour represents joy," says Duncan Pike of Sable Shortbread. "This paint isn't just about looks — it's about what we stand for: family, craftsmanship, and community. We live here in Windsor, and we're proud to be part of its ongoing renewal. This is just the beginning of our transformation — there's more to come, including new signage and final interior finishes — as we continue bringing our vision for this space to life."
